Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Slice them into rounds about half an inch thick.
- Season the Rounds: Arrange sweet potato slices on a baking sheet lined with parchment paper. Drizzle with olive oil, then sprinkle salt and pepper over each round.
- Roast Until Golden: Roast in the preheated oven for 25-30 minutes, flipping halfway through for even browning.
- Add Toppings: Remove roasted rounds from the oven and sprinkle crumbled blue cheese and dried cranberries on top. Return to the oven for an additional 5 minutes to melt the cheese slightly.
