Description

Turkey and Cranberry Pesto Panini is a warm, crispy sandwich bursting with savory turkey, tangy cranberry pesto, and fresh spinach, perfect for a cozy meal any time of the day.


Ingredients

  • 2 slices ciabatta bread
  • 4 oz roasted turkey, sliced
  • 2 tbsp cranberry pesto
  • 2 oz provolone cheese, sliced
  • 1/2 cup fresh spinach

Instructions

  1. Slice the ciabatta bread in half horizontally.
  2. Spread cranberry pesto generously on both halves of the bread.
  3. Layer the roasted turkey slices on one half of the bread.
  4. Add provolone cheese and fresh spinach on top of the turkey.
  5. Place the other half of the bread on top, pesto side down.
  6. Preheat a panini press or skillet over medium heat.
  7. If using a skillet, add a little olive oil or butter to prevent sticking.
  8. Grill the sandwich for about 3-4 minutes per side until golden brown and the cheese is melted.
  9. Remove from heat, slice in half or quarters, and serve warm with extra cranberry pesto for dipping.
