- 2 slices ciabatta bread
- 4 oz roasted turkey, sliced
- 2 tbsp cranberry pesto
- 2 oz provolone cheese, sliced
- 1/2 cup fresh spinach
Instructions
- Slice the ciabatta bread in half horizontally.
- Spread cranberry pesto generously on both halves of the bread.
- Layer the roasted turkey slices on one half of the bread.
- Add provolone cheese and fresh spinach on top of the turkey.
- Place the other half of the bread on top, pesto side down.
- Preheat a panini press or skillet over medium heat.
- If using a skillet, add a little olive oil or butter to prevent sticking.
- Grill the sandwich for about 3-4 minutes per side until golden brown and the cheese is melted.
- Remove from heat, slice in half or quarters, and serve warm with extra cranberry pesto for dipping.
