  • 4 medium zucchinis, sliced lengthwise
  • 15 oz ricotta cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 3 cloves garlic, minced

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare a baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
  3. Add ground turkey to the skillet, breaking it apart while cooking until browned and cooked through (approximately 6-8 minutes). Drain excess fat if needed.
  4. Stir in marinara sauce and half of the chopped basil. Let simmer for about 5 minutes.
  5. Start layering in the prepared baking dish: spoon some sauce at the bottom, followed by a layer of zucchini slices, dollops of ricotta cheese, turkey mixture, mozzarella cheese, and repeat until all ingredients are used up—ending with mozzarella on top.
  6. Cover with aluminum foil and bake for about 30 minutes. Remove foil and bake for an additional 10 minutes or until golden brown and bubbly.
