- 4 medium zucchinis, sliced lengthwise
- 15 oz ricotta cheese
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- 3 cloves garlic, minced
Instructions
- Preheat your oven to 375°F (190°C). Prepare a baking dish with nonstick cooking spray.
- In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
- Add ground turkey to the skillet, breaking it apart while cooking until browned and cooked through (approximately 6-8 minutes). Drain excess fat if needed.
- Stir in marinara sauce and half of the chopped basil. Let simmer for about 5 minutes.
- Start layering in the prepared baking dish: spoon some sauce at the bottom, followed by a layer of zucchini slices, dollops of ricotta cheese, turkey mixture, mozzarella cheese, and repeat until all ingredients are used up—ending with mozzarella on top.
- Cover with aluminum foil and bake for about 30 minutes. Remove foil and bake for an additional 10 minutes or until golden brown and bubbly.
