Description

This creamy whipped feta paired with sweet, caramelized red grapes creates an irresistible Mediterranean-inspired appetizer that will elevate any gathering.


Ingredients

  • 2 cups seedless red grapes
  • 1 tbsp extra virgin olive oil
  • 1 tbsp honey (adjust to taste)
  • 8 oz feta cheese, crumbled
  • 1/4 cup Greek yogurt (full-fat)
  • 2 tbsp extra virgin olive oil
  • 2 tsp fresh thyme leaves

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and dry the red grapes. Spread them on one half of the prepared baking sheet.
  3. Drizzle the grapes with olive oil and sprinkle fresh thyme over them.
  4. Roast the grapes for about 20 minutes until soft and slightly caramelized.
  5. In a food processor, combine crumbled feta cheese, Greek yogurt, olive oil, and thyme leaves.
  6. Blend until smooth and creamy, being careful not to over-process.
  7. Once roasted grapes are slightly cooled, fold them gently into the whipped feta mixture.
  8. Drizzle honey over the top before serving.
  9. Transfer to a serving platter and enjoy with crackers or breadsticks.
