- 2 cups seedless red grapes
- 1 tbsp extra virgin olive oil
- 1 tbsp honey (adjust to taste)
- 8 oz feta cheese, crumbled
- 1/4 cup Greek yogurt (full-fat)
- 2 tbsp extra virgin olive oil
- 2 tsp fresh thyme leaves
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and dry the red grapes. Spread them on one half of the prepared baking sheet.
- Drizzle the grapes with olive oil and sprinkle fresh thyme over them.
- Roast the grapes for about 20 minutes until soft and slightly caramelized.
- In a food processor, combine crumbled feta cheese, Greek yogurt, olive oil, and thyme leaves.
- Blend until smooth and creamy, being careful not to over-process.
- Once roasted grapes are slightly cooled, fold them gently into the whipped feta mixture.
- Drizzle honey over the top before serving.
- Transfer to a serving platter and enjoy with crackers or breadsticks.
