Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a large bowl, whisk together all-purpose flour, cocoa powder, baking powder, and salt.
- In another bowl, cream together softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time to the butter mixture along with vanilla extract; blend until fully incorporated.
- Gradually add the dry ingredient mixture into the wet ingredients while alternating with milk. Mix until just combined.
- Spoon batter into prepared muffin tins about two-thirds full. Bake for about 20-22 minutes or until a toothpick comes out clean when inserted into the center. Allow to cool completely before frosting.
- In a medium bowl, beat together softened butter and powdered sugar until smooth.
- Add peppermint extract and mix until well-blended.
