  • 2 medium onions, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth (low-sodium)
  • 1 cup fresh thyme sprigs (or dried thyme as needed)
  • 2 carrots, chopped
  • 8 ounces mushrooms, sliced

Instructions

  1. Sauté the Aromatics: Turn your Instant Pot to the sauté setting. Add olive oil and when hot, add chopped onions and minced garlic. Sauté until translucent and fragrant (about 3 minutes).
  2. Brown the Venison: Add venison stew meat in batches to avoid overcrowding. Brown each side for about 4 minutes to lock in juices.
  3. Deglaze the Pot: Pour in beef broth while scraping up any brown bits from the bottom of the pot to enhance the flavor.
  4. Add Remaining Ingredients: Stir in thyme sprigs, chopped carrots, and sliced mushrooms until well mixed.
  5. Pressure Cook: Seal the Instant Pot lid tightly and set to cook on high pressure for approximately 60 minutes.
  6. Serve It Up: Once done, allow natural pressure release for about 10 minutes before quick releasing any remaining steam. Serve in bowls with sauce drizzled on top.
