Description

Warm your soul with this hearty Instant Pot Stuffed Pepper Soup, featuring tender peppers, savory ground meat, and wholesome rice in a flavorful tomato broth.

Ingredients

Scale
  • 1 cup diced bell peppers (mixed colors)
  • 1 lb lean ground beef or turkey
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 14.5 oz can diced tomatoes (no salt added)
  • 4 cups low-sodium vegetable broth
  • 1 cup uncooked white or brown rice
  • 2 tsp Italian seasoning

Instructions

  1. Sauté the Aromatics: Set your Instant Pot to sauté mode. Add a drizzle of olive oil and toss in the chopped onion and minced garlic. Sauté until fragrant, about 2 minutes.
  2. Brown the Meat: Add the ground beef or turkey and cook until browned, breaking it apart with a spatula for even cooking.
  3. Add the Veggies: Stir in the diced bell peppers and sauté for an additional 5 minutes until they soften slightly.
  4. Stir in Remaining Ingredients: Add the diced tomatoes, vegetable broth, uncooked rice, and Italian seasoning. Mix well to combine all flavors.
  5. Pressure Cook: Seal the Instant Pot lid and set it to high pressure for 10 minutes.
  6. Release and Serve: Once cooked, use quick release to carefully release the pressure. Open the lid (beware of steam), stir well, and serve hot!
