  • 1 cup mixed green and black olives, pitted
  • 1 can (14.5 oz) diced tomatoes
  • 2 medium onions, sliced thinly

  • 1 cinnamon stick
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Chop onions and mince garlic. Have all ingredients ready for quick cooking.
  2. Sear the Lamb: Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear lamb chops for about 3-4 minutes per side until browned. Remove from pot and set aside.
  3. Sauté Onions and Garlic: In the same pot, add sliced onions and sauté for about five minutes until softened. Add minced garlic and cook until fragrant, about one minute.
  4. Combine Ingredients: Return the lamb to the pot. Add diced tomatoes, olives, cumin, cinnamon stick, salt, and pepper. Stir well to combine all ingredients.
  5. Simmer: Cover and reduce heat to low. Simmer gently for about one hour or until lamb is fork-tender.
  6. Serve: Transfer to a serving platter or individual plates. Garnish with fresh herbs if desired. Serve with fluffy couscous or crusty bread.
