Instructions

  1. Prepare Your Ingredients: Peel and dice the sweet potatoes into bite-sized cubes. Dice the onion and bell pepper similarly.
  2. Brown the Sausage: Heat olive oil in a large skillet over medium-high heat. Add the sausage and cook until browned, breaking it into chunks (about 8-10 minutes).
  3. Add Vegetables: Stir in the diced onion and bell pepper; sauté together for about 5 minutes until softened.
  4. Incorporate Sweet Potatoes: Add the sweet potato cubes to the skillet. Season with salt, pepper, paprika, and thyme. Mix well and add half a cup of water or broth.
