- 1 tsp paprika
- 1/2 tsp dried thyme
Instructions
- Prepare Your Ingredients: Peel and dice the sweet potatoes into bite-sized cubes. Dice the onion and bell pepper similarly.
- Brown the Sausage: Heat olive oil in a large skillet over medium-high heat. Add the sausage and cook until browned, breaking it into chunks (about 8-10 minutes).
- Add Vegetables: Stir in the diced onion and bell pepper; sauté together for about 5 minutes until softened.
- Incorporate Sweet Potatoes: Add the sweet potato cubes to the skillet. Season with salt, pepper, paprika, and thyme. Mix well and add half a cup of water or broth.
- Cover and Simmer: Cover the skillet with a lid and let it simmer on medium heat for about 10 minutes until sweet potatoes are tender.
- Finish with Garlic: Remove the lid and stir in minced garlic during the last minute of cooking to enhance flavor.
- Serve: Transfer to plates and enjoy! Optionally garnish with fresh herbs for added color.
