  • 1 cup fresh Thai basil leaves
  • 2 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 1 tsp brown sugar
  • 8 rice paper wrappers
  • 2 tbsp smooth peanut butter
  • 2 tbsp freshly squeezed lime juice

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat if necessary.
  2. Add minced garlic, soy sauce, and brown sugar; stir until combined and fragrant.
  3. Toss in fresh Thai basil leaves at the end to wilt gently from the heat.
  4. Fill a shallow bowl with warm water. Dip one rice paper wrapper for about ten seconds until pliable but not too mushy. Lay it flat on a clean surface or cutting board.
  5. Spoon about two tablespoons of the beef mixture onto the bottom third of each rice paper wrapper.
  6. Fold up the bottom over the filling, tuck in the sides like wrapping a present, then roll it up tightly but gently.
  7. Repeat until all filling is used up, placing each completed roll seam-side down on a plate.
  8. In a small bowl, mix together peanut butter and lime juice until creamy.
