Description

  • 1 ½ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • 1 cup whole milk (or almond/oat milk)
  • ⅓ cup vegetable oil
  • ¾ cup raspberry jam
  • Red food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a large bowl, whisk together all-purpose flour, cocoa powder, sugar, baking powder, and salt until well combined.
  3. In another bowl, beat the eggs, milk, and vegetable oil until smooth. Gradually add to the dry ingredients and mix until just combined.
  4. Spoon the batter into each cupcake liner about two-thirds full. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Cool completely on a wire rack.
  5. Once cooled, use a small knife or cupcake corer to remove a portion from the center of each cupcake. Fill these holes generously with raspberry jam.
  6. If desired, drizzle red food coloring on top or frost with your choice of icing.
