- 1 ½ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1 ½ tsp baking powder
- ½ tsp salt
- 2 large eggs
- 1 cup whole milk (or almond/oat milk)
- ⅓ cup vegetable oil
- ¾ cup raspberry jam
- Red food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a large bowl, whisk together all-purpose flour, cocoa powder, sugar, baking powder, and salt until well combined.
- In another bowl, beat the eggs, milk, and vegetable oil until smooth. Gradually add to the dry ingredients and mix until just combined.
- Spoon the batter into each cupcake liner about two-thirds full. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Cool completely on a wire rack.
- Once cooled, use a small knife or cupcake corer to remove a portion from the center of each cupcake. Fill these holes generously with raspberry jam.
- If desired, drizzle red food coloring on top or frost with your choice of icing.
