- 1/4 cup low-sodium soy sauce
- 2 tbsp brown sugar
- 1 tsp ginger powder
Instructions
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Season boneless chicken breasts evenly with salt and pepper.
- Dice fresh pineapple and bell peppers into bite-sized chunks for even cooking.
- In a large bowl, whisk together minced garlic, soy sauce, brown sugar, and ginger powder until well combined.
- Place seasoned chicken in the baking dish. Top with diced pineapple and bell peppers, then drizzle the marinade over everything.
- Bake in the preheated oven for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C). Serve warm.
