  • 34 boneless, skinless chicken breasts
  • 1/4 cup fresh dill, chopped
  • 1/4 cup freshly squeezed lemon juice
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 cup medium-grain couscous
  • 1 1/4 cups vegetable broth
  • 2 tbsp honey

Instructions

  1. In a bowl, whisk together lemon juice, minced garlic, chopped fresh dill, and olive oil to create the marinade.
  2. Place chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Marinate for at least 30 minutes.
  3. Heat a skillet over medium-high heat. Remove chicken from marinade (discard marinade) and cook for about 6 minutes per side, or until golden brown and cooked through.
  4. While the chicken marinates, bring vegetable broth to a boil in a saucepan.
  5. Stir in couscous, cover, and remove from heat. Let sit for about five minutes until fluffy.
  6. In a small bowl, mix honey with any remaining marinade (ensuring it's cooked first) to create a delightful sauce.
  7. Transfer couscous to bowls; slice cooked chicken on top and drizzle with sauce. Garnish with extra dill if desired.
