- ½ cup whole milk
- 1 tsp sugar plum extract (or vanilla)
- 2 cups powdered sugar
- ½ cup unsalted butter, room temperature
- 2 tbsp heavy cream
- Food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In another bowl, cream together unsalted butter and caster sugar until light and fluffy. Add eggs one at a time until fully incorporated.
- Gradually mix in dry ingredients alternately with milk, starting and ending with dry ingredients. Stir in sugar plum extract.
- Fill cupcake liners two-thirds full with batter and bake for about 18-20 minutes or until golden brown. A toothpick inserted into the center should come out clean.
- For the frosting: Beat together powdered sugar and unsalted butter until smooth. Gradually add heavy cream until you reach the desired consistency. Add food coloring if desired.
- Once cupcakes are cooled, frost as desired.
