Ingredients

  • 1 cup caster sugar
  • 1 ½ tsp baking powder

  • ½ cup unsalted butter, room temperature
  • 3 large eggs, room temperature
  • ½ cup whole milk
  • 1 tsp sugar plum extract (or vanilla)
  • 2 cups powdered sugar
  • ½ cup unsalted butter, room temperature
  • 2 tbsp heavy cream
  • Food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In another bowl, cream together unsalted butter and caster sugar until light and fluffy. Add eggs one at a time until fully incorporated.
  4. Gradually mix in dry ingredients alternately with milk, starting and ending with dry ingredients. Stir in sugar plum extract.
  5. Fill cupcake liners two-thirds full with batter and bake for about 18-20 minutes or until golden brown. A toothpick inserted into the center should come out clean.
  6. For the frosting: Beat together powdered sugar and unsalted butter until smooth. Gradually add heavy cream until you reach the desired consistency. Add food coloring if desired.
  7. Once cupcakes are cooled, frost as desired.
