- 2 large eggs (room temperature)
- ½ cup unsalted butter (softened)
- ¾ cup whole milk
- ¾ cup brewed espresso or strong coffee
- 1 cup mascarpone cheese
- 2 tbsp sugar (adjust to taste)
- Additional cocoa powder (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a large bowl, whisk together flour, sugar, cocoa powder, and baking powder until well combined.
- In another bowl, cream the softened butter until light and fluffy. Add eggs one at a time, mixing well after each addition.
- Gradually mix in the milk and brewed espresso until smooth.
- Fold the dry ingredients into the wet mixture gently until just combined. Be careful not to overmix.
- Spoon the batter into cupcake liners, filling them about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- While cupcakes cool completely, mix mascarpone cheese with sugar until creamy and smooth.
- Generously top each cooled cupcake with the mascarpone mixture.
- Dust with cocoa powder for that final touch.
