  • 2 large eggs (room temperature)
  • ½ cup unsalted butter (softened)
  • ¾ cup whole milk
  • ¾ cup brewed espresso or strong coffee
  • 1 cup mascarpone cheese
  • 2 tbsp sugar (adjust to taste)
  • Additional cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, and baking powder until well combined.
  3. In another bowl, cream the softened butter until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Gradually mix in the milk and brewed espresso until smooth.
  5. Fold the dry ingredients into the wet mixture gently until just combined. Be careful not to overmix.
  6. Spoon the batter into cupcake liners, filling them about two-thirds full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. While cupcakes cool completely, mix mascarpone cheese with sugar until creamy and smooth.
  9. Generously top each cooled cupcake with the mascarpone mixture.
  10. Dust with cocoa powder for that final touch.
