Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
- In a large bowl, whisk together the flour, baking soda, granulated sugar, brown sugar, cinnamon, and a pinch of salt.
- In another bowl, combine the mashed bananas, crushed pineapple, eggs, vegetable oil, and vanilla extract. Mix until well incorporated.
- Gently fold the wet mixture into the dry ingredients until just combined; avoid over-mixing.
- Stir in the chopped toasted pecans.
- Divide the batter evenly between prepared pans and bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in pans before transferring to wire racks.
- In a bowl, beat together softened cream cheese and butter until smooth and fluffy.
- Gradually add powdered sugar and continue to mix until creamy. Stir in vanilla extract.
- Once cakes are completely cool, generously frost between layers and on top with cream cheese frosting. Decorate with additional pecans or fresh fruit if desired.
