  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a large bowl, whisk together the flour, baking soda, granulated sugar, brown sugar, cinnamon, and a pinch of salt.
  3. In another bowl, combine the mashed bananas, crushed pineapple, eggs, vegetable oil, and vanilla extract. Mix until well incorporated.
  4. Gently fold the wet mixture into the dry ingredients until just combined; avoid over-mixing.
  5. Stir in the chopped toasted pecans.
  6. Divide the batter evenly between prepared pans and bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in pans before transferring to wire racks.
