Description

Warm up with this comforting Marry Me Chicken Soup, brimming with tender chicken, vibrant veggies, and creamy broth. Perfect for chilly evenings and cozy gatherings.

Ingredients

Scale
  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Once hot, add diced onion, carrots, and celery. Sauté for about five minutes until softened and fragrant.
  2. Stir in the minced garlic and cook for an additional minute until golden brown.
  3. Add chicken thighs to the pot and season generously with salt, pepper, and dried thyme. Cook each side for about four minutes until beautifully browned.
  4. Add chicken broth to the pot along with any remaining seasoning. Bring to a gentle boil before reducing heat to low.
  5. Let the soup simmer uncovered for about twenty minutes or until the chicken is cooked through (internal temperature should reach at least 165°F).
  6. Remove cooked chicken from the pot and shred it using two forks before returning it along with heavy cream. Stir well until combined and heated through—then serve hot!
