  • 1 lb pork tenderloin
  • 1/4 cup pure maple syrup
  • 3 tbsp yellow mustard
  • Salt, to taste
  • Pepper, to taste
  • 2 medium sweet potatoes, diced
  • 4 carrots, sliced into bite-sized pieces
  • 1 large red onion, chopped
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together maple syrup, yellow mustard, salt, and pepper until smooth.
  3. Place the pork tenderloin on a baking sheet. Brush generously with the marinade mixture.
  4. In a separate bowl, combine diced sweet potatoes, sliced carrots, and chopped red onion. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
  5. Scatter the seasoned vegetables around the pork on the baking sheet.
  6. Roast in the preheated oven for about 25-30 minutes or until the internal temperature of the pork reaches at least 145°F (63°C). Stir veggies halfway through cooking for even roasting.
  7. Let rest for five minutes before slicing the pork. Serve alongside roasted vegetables and drizzle any remaining marinade over top.
