Description

Ingredients

  • 1 lb ground beef or turkey
  • 1 cup long-grain white rice
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1 cup bell peppers, chopped (any color)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly spray a 9×13 inch baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  3. Stir in the taco seasoning, diced tomatoes (with juice), and black beans into the meat mixture. Cook for about five minutes until heated through.
  4. Meanwhile, cook the rice according to package instructions. Once done, fluff it with a fork.
  5. In the prepared baking dish, spread half of the cooked rice at the bottom. Layer half of the meat mixture on top, followed by half of the chopped bell peppers and one cup of cheese. Repeat these layers with remaining ingredients, finishing with extra cheese on top.
  6. Cover with foil and bake for approximately 25 minutes. Remove foil and bake for an additional ten minutes until golden and bubbly.
  7. Slice and serve your Taco Rice Casserole hot from the oven!
