Ingredients

Scale
  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 3 large eggs
  • 1 cup whole milk (or buttermilk)
  • ½ cup vegetable oil
  • 2 tsp pure vanilla extract
  • 1 cup heavy cream (cold)
  • 2 cups powdered sugar (sifted)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round baking pans.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt until well combined.
  3. In another bowl, beat together eggs, milk, vegetable oil, and vanilla extract until smooth. Pour into dry ingredients and mix until just combined.
  4. Divide the batter evenly between prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  5. Allow the cakes to cool completely in their pans before transferring to wire racks.
  6. In a mixing bowl, whip cold heavy cream until soft peaks form.
  7. Gradually add sifted powdered sugar while continuing to whip until stiff peaks form.
  8. Layer frosting between cooled cake layers and spread on top for an elegant finish. Slice and serve!
